Tonight we were going to go out for dinner because we had a coupon for a local Italian restaurant but Bethany got home from swimming with Daddy at his work crying. She was so tired she just wanted to put on her comfy's and eat at home. Which was actually ok with me. I was ready to go out but to be honest this Momma had a long week and wanted to stay in too. So we checked the pantry and was going to make spaghetti. Eh. didn't really want that.
I always keep a bit of steak in the freezer. I stock up when it's on sale. I don't eat meat (rare occasion will I eat meat.) So I tend to buy good cuts and organic, free range, grass fed beef. We are in the Midwest so good cow is important :)
Easy recipe for Philly's. Keep your meat frozen and thaw it out just a bit. Make sure that it is still quite firm. Slice it paper thin. (Keeping it a bit frozen helps cut it thin.) I use about 2 TBSP. of olive oil in a searing hot pan. (Make sure all babies/kiddos/dogs aren't close.) Saute it for about 5 min or so. We tend to keep ours quite pink. Bethany is a total carnivore and loves pink steak. Ewww. Throw in some mushrooms and saute until they are soft. Place on a hoagie and preheat your broiler. Put meat/mushrooms (you can even add onions) on your hoagie and top with provolone cheese. Broil until melted. This meal literally only took me about 15 minutes start to finish to make. Gotta love those meals!
Speaking of pink steak, two weekends ago we had Papa Dave in town. Bethany really wanted a steak dinner for her birthday so we headed out. Can you see how pink it is??? Second ewww. She is so like her Daddy. We don't eat steak all the time but we couldn't not treat the birthday girl!
Since it was her birthday we ended up going to Chucke cheese for an afternoon. Daddy had to work but thankfully he was able to meet us over his lunch hour. Skeet ball is one of her favorites.
